First Day Trip of 2012- Baxter Springs, Kansas

Today my friend and I went on a short Day Trip to Baxter Springs, Kansas to visit a restaurant featured on Diners, Drive-Ins and Dives called “Cafe on the Route“.  I went here last year with my family, but didn’t take pictures or blog about it for some reason, but I came prepared this time!

Hannah and I left early in the morning and made the almost two hour drive, across the Kansas state-line while listening to music at an outrageous volume!

We made it to Baxter Springs, but Cafe on the Route wasn’t quite open yet.  So we walked around the town a little bit.  It’s a tiny little town with one main strip that’s on the Kansas portion of Old Route 66.  We walked down and found a plethora of insurance agencies, a tack shop and tutoring centers.  It was a really quaint town, and everyone knew each other’s names and waved at each other.  It was sweet.  We also learned that the building that Cafe on the Route is in was once a bank, and in 1876 that bank was robbed by none other than Jesse James- which I thought was very cool, and I found it interesting that when he robbed the bank he had a grand total of 2,900 dollars!

Cafe on the Route finally opened and we were the first customers and we were hungry and eager to eat!  We ended up eating so much food, and amazingly it wasn’t an outrageous amount of money- one of my favorite parts of the restaurants featured on Diners, Drive-Ins and Dives.

I got an open-faced beef tenderloin sandwich, their fried potato salad (which was featured on Diners, Drive-Ins and Dives), baked potato soup and deep-fried strawberry cheesecake!  Every thing was really spectacular.  The food was the epitome of comfort foods, and I personally love sweet deep-fried things, and the deep-fried cheese cake was no exception.  It was such a rich flavor.  The dough was crispy and the cheesecake inside was still cold, but became more of a cream that blended sweetly with the pile of strawberries on it.  Yum!

Hannah and I stopped at the state signs and took pictures, listened to music that made us excited about the open road.  It was a ton of fun.  I wish we could have made the day last longer, and could have gone to even more exciting place, but we had a blast, and I’m grateful to have already had an adventure three days into 2012.  I can’t wait for even more!
